Microwave meals

With a little planning and a little space in the mini fridge, students can eat cheap and healthy meals that do not come in a box.

Chicken is a popular low-fat protein option that many people enjoy. It has a mild taste and pairs well with just about anything.

Cooking chicken in a microwave takes a little patience, but the results can be delicious. Add a vegetable and a low-fat carbohydrate and students can have a complete meal without  breaking the bank.

 

Italian Style Chicken

2 servings

2 chicken breasts

1 egg slightly beaten

¼ to ½ cup bread crumbs

1/8 to ¼ cup grated parmesan cheese

½ cup tomato sauce

½ teaspoon Italian seasoning

1/8 teaspoon garlic powder

2 slices mozzarella cheese

 

In a shallow dish mix the breadcrumbs and Parmesan cheese. Dip each chicken breast in the egg and then in the crumb mixture and put lay it in a shallow microwave safe baking dish.

Cover loosely with wax paper and microwave for five minutes.

While the chicken is cooking, mix the Italian seasoning and garlic powder in the tomato sauce.

Turn the chicken over, pour the sauce on the chicken and cook loosely covered for another four to five minutes.

Lay a slice of cheese on each piece of chicken and finish cooking for another one and a half to two minutes.

Let the chicken stand for three or four minutes to allow it to absorb some of the moisture it lost during cooking.
